Brinjal Pulusu


I am a huge fan of Andhra dishes. Most of the Andhra dishes have very unique flavor. This is a very tasty dish. I am not sure if this is exactly how you prepare this dish traditionally. But it turned out well and this is a new favorite at our Malayalee home J

 My sister who usually doesn’t like eggplant based dishes tried this and told me she’s in love with this dish and whenever we make eggplants at home we should make it this way. I was very happy to hear that as this is the first time I made this pulusu and my sister who can be a picky eater especially when it comes to veggie dishes said she loved this dish.



Ingredients:
Brinjal- 8, chopped
Tamarind-1 small lemon size diluted with water
Onion-1 sliced
Mustard seeds -1/2 tsp
Cumin seeds -1 tsp
Turmeric powder: ¼ tsp
Chilli powder-1 1/2 tsp
Coriander powder-1 Tbsp
Coconut- 1/2 cup
Green chilli-3
Sugar -1/4 tsp
Curry leaves: 1 sprig
Salt & Oil

Method:
  • Grind coconut, cumin seeds, and green chilies to a smooth paste
  • In a pan heat oil and splutter mustard seeds
  • Add onion and curry leaves and sauté for about 3 minutes
  • Add turmeric powder, coriander powder, chili powder, and salt and sauté till the raw smell goes away
  • Add birnjal and mix well and let it cook for about 5 minutes in medium heat but stir often
  • Add the coconut paste along with sugar and tamarind water and still well
  • Check for salt, reduce the heat to medium-low, cover the pan and let it summer for about 10-15 minutes


Serve hot with rice!!
