One Pot Chicken Biriyani


I’ve always been scared to make biriyani in one pot as I never knew the amount of water required to cook rice when I cook it with chicken etc. For some reason I wanted to try making this dish. Already warned Mom if I mess up the dish not to yell at me LOL but she did encourage me to give it a try and I was pleased with the result :-)

Ingredients:
Rice: 3.5 cups
Chicken: 3 lbs
Green Chili- 3 sliced
Onion: 1 big, thinly sliced
Tomato: 1 big, diced
Ginger-Garlic Paste: 1 tsp
Mint Leaves: Handful, chopped
Coriander Powder: 2 Tbsp
Chili Powder: 1 Tbsp
Turmeric Powder: 1 tsp
Fennel Powder: 1 tsp
Garam Masala: 1 tsp
Vinegar: 1 Tbsp
Cinnamon: 1” piece
Mace: 3 small pieces
Cardamom: 3, slightly crushed
Bay Leaves: 2
Cloves: 4, slightly crushed
Water: 4 cups
Ghee: 1 Tbsp
Salt & Oil

Method:
  • Wash rice thoroughly and soak it for about 30 minutes. Wash cleaned chicken pieces, drain well, and set aside
  • In a big pot heat some oil. Add cinnamon, mace, cardamom, bay leaves, and cloves to this and sauté for about 2 minutes. Add onion and saute sauté till its transparent. Add green chilies, ginger garlic paste, and salt and sauté for about 3 minutes.
  • Add coriander powder, chili powder, turmeric powder, fennel powder, and garam masala; sauté till the raw smell goes away. Add diced tomatoes, coat well and cook till tomatoes are tender
  • Add chicken, vinegar and half of chopped mint leaves, mix well and cook covered for about 10 minutes. Add the soaked rice to this, add 4 cups of water and remaining mint leaves, stir well, cover and cook till water evaporates and rice is only 3/4th done. Switch off the heat. I did stir this occasionally and checked to see if I need more water to cook the rice
  • Cover with lid tightly for about 30 minutes to cook the rice completely and serve hot with papad, raita, and pickle…
