Uzhunnu vada

Urad dal soaked in water overnight – 2 cups
Urad dal flour- add as necessary if the batter is too wet
Finely chopped shallots – 6
Green chillies – 4 slit and chopped
Chopped Ginger – 1 tsp
Chopped curry leaves – 2 tsp
Baking Soda – 1/4 tsp
Salt – to taste
Oil – to taste


Grind soaked urad dal and salt together using very little water (Batter is supposed to be thick)
If the batter is too wet add urad dal flour until it reach the right consistancy
Add shallots,ginger,curry leaves and baking soda into the ground paste and mix well
Make a lemon size ball with the paste, flatten it, and make a hole in the center (if it is sticking to your hands rub your hands with water)
Heat the oil
Drop the vadas in the hold oil and fry it till its golden brown
Place the done vadas on a paper towel to drain excess oil
Serve hot with coconut chutney or sambar
