Ingredients:
Raw Mango: 2, cut into bite size pieces
Sesame Oil: ¾ cup
Asafoetida: ¼ tsp
Ginger: 3 cloves, thinly sliced
Chili Powder: 2 tsp
Salt: 3-4 Tbsp (according to your taste)
Turmeric Powder: 1 tsp
Mustard Seeds: 3 tsp
Fenugreek Seeds: 1.5 Tbsp
Method:
- Wash mangoes, dry it well, and cut into bite size pieces
- Add sliced garlic to mangoes along with chili powder, turmeric powder, and salt. Mix well using a clean, dry spoon and set aside
- Heat a roasting pan and roast mustard seeds and fenugreek seeds for few minutes (I roasted in medium heat for about 6-7 minutes)
- Once it’s cool grind it to very fine powder
- Add this powder to the mango and mix well again using a spoon
- In a sauce pan heat the sesame oil in medium-low heat. When the oil is warm add asafoetida to the oil and turn off the heat. Let it cool
- Add the cool oil to the mangoes and mix well
- Transfer this to a clean glass jar, let it sit untouched for 4-5 days and enjoy with rice :)
I used Mustard oil instead of Sesame Oil as I didn't realize I was out of sesame oil till I started making this. Still it came out so well. Hope you all will try this
