This is my version of Thai Yellow curry. I had to make something for a friend who doesn’t like spicy food at all. So I decided to make this recipe which came out tasting exactly like thai yellow curry without using any thai yellow curry paste. Try it, you might enjoy it too as much as we did...
Ingredients:
Shrimp: 1lb, cleaned
Red bell pepper: ½, thinly sliced
Sweet Basil Leaves: 5, torned
Coconut Milk: 1 ½ cup, thin
Turmeric: ½ tsp
Onion: 1 medium, diced
Green Chili: 2, minced
Ginger: 1” pieced, minced
Garlic: 2 cloves, minced
Salt & Oil
Method:
In a pan heat oil and sauté onion along with ginger, garlic, and green chilies
Add some salt, turmeric, and red bell pepper and sauté for another 2 minutes in medium-low heat
Now add cleaned shrimp and satue for 3 minutes in high heat
Pour coconut milk, add basil leaves, cover the pan and let it simmer in medium heat for few minutes
Serve with basmati rice
Enjoy!!!
