Ingredients
Basmati Rice: 2 cups
Carrot: 1, diced
Green Peas: ½ cup, cooked
Green Beans: ½ cup, chopped
Ginger: 1” piece, grated
Garlic: 2 cloves, minced
Onion: 1 medium, diced
Onion: 1 medium, diced
Turmeric powder: ½ tsp
Cardamom: 2
Cinnamon: 1” piece
Bay leaves: 2
Cumin Seeds: 1 tsp
Green Chili: 3, split
Ghee: 2 Tbsp
Cilantro: ½ cup, chopped
Cashews: handful
Garam Masala: 1 ½ tsp
Salt
Method
- Soak rice in water for 30 minutes, drain and keep it aside
- Heat ghee in a thick bottom pan
- Add cardamom, cinnamon, cumin seeds, bay leaves and let it sauté for a minute or two
- Now add onion, garlic, ginger, turmeric powder, green chilies and sauté till the raw smell goes away
- Add salt, garam masala, and veggies. Mix well and let it sauté for a minute
- Add rice, mix well and pour 4 cups of water
- Cook it covered until the rice is well cooked and all the water evaporates. Do this in low-medium heat
- Add chopped cilantro leaves, roasted cashews, and fluff the rice using a fork
- Serve hot with chicken curry or raita and pickle
