Ingredients:
Shrimp: 1 lb, cleaned and washed
Shallots: 1/2 cup, chopped
Green Chillies: 2, split
Dry Red Chillies: 3, broken
Mustard Seeds: 1/2 tsp
Cumin Seeds: 1/2 tsp
Curry Leaves: 1 sprig
Salt & Oil
To Grind:
Coconut: 1/2 cup, shredded
Green Chillies: 2
Shallots: 3
Ginger: 1" piece
Garlic: 2 cloves
Turmeric Powder: 1/4 tsp
Chili Powder: 1/2 tsp
Method:
Clean and wash shrimp thoroughly and pat dry with kitchen towel (I cut shrimp into half as I was using jumbo shrimp)
Grind all the ingredients under To Grind using very little water and set aside
Heat oil in a pan and splutter mustard seeds and cumin seeds
Add curry leaves, green chilies, dry red chilies, and shallots and let it saute till shallots are soft and tender
Add shrimp and salt to the pan and let it cook uncovered in low-medium heat for about 5 minutes
Now add the coconut paste to pan, mix well with shrimp, check for salt and let it cook for about 10 minutes on low heat
Serve hot with rice!!
