Ingredients:
4 eggs
1 large onion (thinly sliced)
1/2 tsp ginger-garlic paste
1 medium tomato (cubed)
1/4 tsp turmeric powder
2 tsp coriander powder
2 green chilly (split lengthwise)
1 tsp black pepper powder
1/4 tsp garam masala powder
1 cup coconut milk
1 1/2 cup water
1/4 tsp vinegar
1/4 tsp mustard
Salt & Oil
Direction:
- Hard boil eggs, remove shell and keep it aside
- Heat oil and add mustard seeds and let it splutter
- Add thinly sliced onions and ginger-garlic paste and stir until the onions turn light brown
- Add turmeric powder, coriander powder, black pepper powder, garam masala powder, and curry leaves and let it roast with the onion for couple of minutes
- Add in tomato and green chilly along with half a cup of water and stir occasionally
- When tomatos is cooked half way pour in rest of the water and vinegar and bring it to a boil
- Pour in coconut milk and let it summer in low heat for few minutes and turn off the heat
- Add eggs (split lenghtwise) into the masala and serve it hot with Appam, chappathi, or naan
