Chettinadu Potato Roast




Ingredients: 
Potato: 2 large
Onion: 1 small, diced
Garlic: 2 cloves, minced
Turmeric Powder: 1/4 tsp
Salt & Oil

To Grind:
Urad Dal: 2 Tbsp
Black Pepper: 1 tsp
Dry Red Chili: 3-4 broken
Curry Leaves: 5-6 leaves

Method:
  • Dry roast the ingredients to grind and make fine powder out of it when its cool
  • Cut potatoes into bite sizes pieces. Wash well, soak it in water and set aside
  • In a pan saute onion and garlic till onion is transparent. Drain the potatoes and add it to the pan along with enough salt. Fry till potatoes are golden brown and cooked well. I covered the pan the entire time and stirred every now and then to make sure potatoes didn't stick to the bottom
  • Add the ground powder to this and mix well and fry it uncovered for about 5 minutes in medium heat

Serve hot with rice or chappathi :)
