Simple Spicy Egg Curry

Eggs: 6, hard-boiled
Onion: 2 medium, thinly sliced
Curry Leaves: 1 sprig
Tomato: 1 medium, diced
Coconut Milk: ½ cup
Coriander Powder: 2 Tbsp
Chili Powder: 1.5 tsp
Turmeric Powder: ½ tsp
Garam Masala: ½ tsp
Green Chili: 2, split
Oil & Salt

Hard boil eggs, remove shells and set aside
Heat oil in a pan
Add onion, curry leaves and few pinches of salt and let it sauté till onion becomes translucent
Add tomotoes and green chili; cover and cook till you can mash tomatoes well
Add garam masala, coriander powder, chili powder, turmeric powder and sauté in low-medium heat for about 5 minutes
Add coconut milk, stir well, check for salt and let it simmer in medium heat for 3 minutes
Add eggs and cook uncovered for another 2 minutes (Add more water if you don’t want the curry to be thick)

Serve hot with chappati or puri!!!  :)
