Lemon Rice


Basmati rice - 1.5 cup
Onion - 1 small, chopped fine
Finely chopped ginger - 2 tsp
Lemon juice - 1.5 tbsp
Turmeric powder - 1/4 tsp
Hing/asafoetida - 2-3 pinch
Cashewnut - 1/4 cup
Urad dal/Split black gram - 2 tsp
Cumin seeds - 1/2 tsp
Mustard seeds - 1/2 tsp
Curry leaves - 1 sprig
Dry red chillies - 3
Oil - 1 tbsp
Salt - to taste

  •  Cook basmati rice with turmeric powder and a tsp of salt. Once it is cooked let it cool
  • 1. In a wide or deep nonstick pan, heat oil ,splutter the mustard and cumin seeds, add the dry red chillies, urad dal, curry leaves and cashews. When they turn light brown add onion, curry leaves and salt.
  • 2. When the onion turns transparent and soft add hing.  Now add the cooked rice, lemon juice, and mix well. Check for salt.  Saute well for a few more minutes and remove from heat.
Serve hot!!!
